A delicious and rich fruit cake for rum and fruit lovers. This traditional black cake is baked with fruits aged in white rum, red wine, and fruit brandy for over a year. The fruits are then blended to a smooth paste, added to a blend of cinnamon, nutmeg, allspice and sifted flour. This rich spiced cake, filled with ‘drunken fruits’, gets its name from the addition of burnt sugar -known as browning – added just before the cake goes in the oven, giving it the distinctive rich color and its name “black cake.”
